To prepare the tomatoes, preheat the
oven to 220˚C. Cut each tomato in half and place them, cut side up, on a baking
tray. Brush with the olive oil, then sprinkle the open faces with the castor
sugar and season with salt and pepper. Roast for 20-30 minutes or until they
begin to blacken. |
