Preheat oven to 200°C.
Heat olive oil in a frying pan. Season the lamb and add to the oil.
Cook for 2 minutes each side and place in the oven. Cook for 15
minutes. Remove from oven and let rest for 10 minutes before
serving.
to plate
up:
Divide mashed
potato among serving plates; top with racks of lamb, dollop
with eggplant tappe. Serve with steamed green beans, if
desired, then fill your glasses with Merlot Cabernet...
