180g pure greed basil pesto |
Pasta
should be cooked in plenty of water. You need a high rimmed large
saucepan. For every 500g of pasta you will need 5 litres of water,
1/2 tsp of salt and a drop or two of olive oil. When the water boils
(it must be really bubbling) throw the pasta in and stir with a
fork. Follow the cooking times indicated on the packet, until "Al
dente". When it is ready - taste it to see if it is "al dente", then
strain it into a colander. Pour the pasta into a serving bowl with
the basil pesto and stir well. If the sauce is not very liquid,
"loosen" the sauce with a little bit of the boiling water from the
pasta pot. Sprinkle over some freshly grated parmesan cheese and
garnish with one or two basil leaves.
