To
prepare the tomatoes, preheat the oven to 220˚C. Cut 400g grape
tomatoes in
half and place them, cut side up, on a baking tray. Brush with the
extra-virgin olive oil, then sprinkle the open faces with 2
pinches castor
sugar and season with salt and pepper. Roast for 15-20 minutes or
until they begin to caramelise. Scatter
the cheese and thyme leaves onto the crostini, place tomato halves
on top, cut-side up, then drizzle with oil and
sprinkle with salt & pepper. Grill under a hot grill until lightly
golden and top with a spoonful of Olive Tappé. Fill your glasses with
