100g plain flour

Preheat
oven to 200 C. To make the oatmeal biscuits combine plain
flour, fine oatmeal, sea salt, brown sugar and baking
soda in a food processor. Process until just blended. Add in the
unsalted butter, (chilled and cubed) until the mixture
resembles coarse crumbs. Through the feed tube add lemon juice and
milk. Pulse just until the dough begins to hold together. Around 10
quick pulses. Do not form a ball. Transfer the dough to a floured
surface. Roll to 3 mm thick. Using a 5 cm scalloped pastry cutter,
cut out the biscuits. Transfer the rounds to a non stick baking
sheet. Pierce each biscuit 3 or 4 times with a fork to create an
attractive design. Place in the oven and bake for 10 minutes until
lightly brown around the edges. Cool. makes: 24
